Healthy Treats

This is my scratchpad for creating candy-like treats to avoid sugar overload.

Did you know about tempered chocolate?  It's important to know why - and how to do it easily using the seeding method - see cooking for engineers.

Inspired truffles

  • Step 1. Make a ball or another shape out of inner ingredients of choice
  • Step 2. Roll in honey, melted chocolate or another similarly sticky ingredient
  • Step 3. Roll in cocoa powder
Honey balls

This is an adaptation from a simple cooks.com recipe
  • 1 cup of dry milk or creamed coconut
  • 1 cup nut butter of choice
  • 1/2 cup honey
  • 1/4 cup coconut
Mix and roll into balls. It is reasonable to add a variety of things inside: raisins, finely chopped nuts or dry fruits.

Chocolate nut clusters

Found this at Shannon says Paleo:

  • 1 cup Almonds
  • 1/2 cup Walnuts
  • 1/2 cup Sunflower Seeds
  • 1/3 cup Dried Cranberries
  • 1 cup Dark Chocolate (70% is preferred)
In other words, make a creative trail mix, melt the chocolate, then mix it up till coated, fish out clusters and lay them to cool.  I will probably want to temper the chocolate to make those.

The idea is simple enough - just remember to temper the chocolate if the treats are to sit at room temperature for some time.
